These ingredients makes 4 servings:
1 Avocado – bark removed, cupped, and diced
4 ounces of fresh, sliced mushrooms
12 grape tomatoes, split in two
2 tablespoons of olive oil, split in half
2 parts (6 ounce each) of strip salmon
5 sprouts of fresh cilantro, minced
1 fresh cayenne pepper, minced
One(1) ounce of feta cheese, crushed
2 tablespoons of refined white vinegar
¼ fat spread, melted and split
8 ounces leaf lettuce, slit into bite-size chunk
Pepper and salt to taste
How to Prepare
1. Heat up the oven griddle. Put Salmon on a baking sheet lined with aluminium foil, and rub in the melted fat. Spice with salt and pepper then sear for 15 minutes.
2. Dissolve the remaining fat (butter) in a saucepan over average heat. Simmer the mushrooms until they’re soft.
3. Put the tomatoes in a bowl. Sprinkle one tablespoon of olive oil over it, and season with pepper and salt.
4. Toss the salmon, avocado, mushrooms, tomatoes, lettuce, cayenne pepper and cilantro together in a large bowl. Add salt and pepper, to taste. Drizzle with the remaining vinegar and olive oil then feta cheese.
And your salmon avocado salad is ready.
